Recipe Of The Week: Lasagne


Lasagne
3 cups prepared White Sauce
350g fresh lasagne sheets
1/2 recipe prepared mince Bolognese Sauce
1 cup torn basil leaves (optional)
1 cup grated tasty cheese
White Sauce
70g butter
1/2 cup flour
1/2 tsp mustard powder
1/2 tsp finely grated nutmeg
3 cups whole milk

To make the White Sauce, heat the butter and flour in a large pot over a gentle heat. Once butter is melted add mustard powder, nutmeg and 1 cup of milk. Stir continuously until sauce starts to thicken. Add remainder of the milk and continue stirring until a thick sauce is produced. Season to taste with salt and pepper or add other flavour combinations.
To make the Beef Lasagne, preheat oven to 180˚C. Spread 2 tablespoons of White Sauce on the base of a lasagne dish (about 25cm x 30cm). Layer a third of the lasagne sheets over the White Sauce and top with half of the mince sauce and half the basil leaves, if using. Spread 1 cup of white sauce on top, layer with a third more lasagne sheets, the remaining mince sauce, the rest of the basil leaves, if using, and another cup of white sauce. Top with the remaining lasagne sheets and white sauce. Sprinkle with grated cheese and cover with tinfoil. Bake for 40 minutes then uncover and bake a further 15 minutes until golden brown and cooked through.

Recipe Of The Week: Chcolate Brownie


Chocolate Brownie
175g butter, coarsely chopped
175g dark cooking chocolate coarsely chopped
1½ cups caster sugar
4 eggs, lightly beaten
½ cup plain flour
2 tbsp cocoa powder
½ cup chocolate chips
Icing sugar to dust

1. Heat oven to 160ºC fan bake. Line a 17cm x 27cm slice tin with nonstick baking paper.

2. Place butter and chocolate in a heatproof bowl over a saucepan of simmering water, or microwave for 2 to 3 minutes, to melt. Whisk until smooth, then stir in sugar and eggs.

3. Sift flour and cocoa powder together, then stir into chocolate mixture. Lastly, gently stir in chocolate chips.

4. Pour into prepared tin. Bake for 1 hour or until an inserted skewer comes out moist but clean. Cool, then remove from tin and cut into slices. Dust with icing sugar before serving.

Recipe of The Week: ANZAC Biscuits


ANZAC Biscuits

Anzac biscuits are easy to make and taste great! Enjoy this traditional biscuit on Anzac Day or any other day of the year.

 
1 cup flour

1 cup caster sugar

1 cup desiccated coconut

2 cups rolled oats

125g butter

2 tbsp golden syrup

1 tsp baking soda

3 tbsp boiling water

 
Heat oven to 180C (160C fan bake). Line two baking trays with non-stick baking paper. Place flour, caster sugar, coconut and oats in a bowl and stir to combine. Make a well in the centre.

Place butter and golden syrup in a saucepan to melt, or microwave in a bowl to melt. Dissolve baking soda in boiling water. Add melted ingredients and dissolved baking soda to dry ingredients and mix to combine.

Roll spoonfuls into balls and press onto prepared baking trays, allowing space for biscuits to spread while cooking.

Bake for 15 minutes or until firm and golden brown. Remove to a wire rack to cool, and enjoy!
